High Protein Tofu Vegan Sandwich


We don't eat a lot of sandwich's...

I know, they're incredible and are easily one of the most satisfying choices of lunch you can make. But the problem we usually have is that we're usually still hungry. But with this huge sandwich, we're always full after it.

So if you're like us, and want to know you're getting a proper meal out of a sandwich, you have to try this.


Serves (3-4)



- 300g firm tofu

- 1 tbsp apple cider vinegar

- 3 tbsp soy sauce

- 1 tbsp maple syrup

- 2 tbsp water


- 1/2 cup cashew nuts (soaked)

- 1 tbsp apple cider vinegar

- Salt

- 1/2 cup water

- 2 tsp tomato paste

- 1/2 chopped onion

- Pepper


- 4 slices of bread

- 1/2 cup kimchi

- 1/2 avocado

- 1 large tomato, sliced


1. Start by soaking some cashew nuts in water

2. Slice the tofu into thin, large pieces

3. Now in a bowl, add the wet ingredients in the tofu section to a bowl.

4. Add the tofu to a large tray and bake for 20 at 350F/176C

5. Add all the dressing ingredients to a blender and blend well.

6. Toast the bread

7. Line the bread with the dressing

8. Add the tofu, then kimchi, avocado, and tomato.

9. Press it down and slice it up to share or demolish yourself.
