Zesty Veggie Orzo

 
Looks like rice, tastes like pasta. What a combination hey? How could you not enjoy this? It's really simple to make, takes less than 20 minutes, and is a crowd pleaser for sure!
If you don't believe us, I guess you'll just have to make it and see for yourself, hey?
 

Serves (2-3)

 

Ingredients

- 1 tsp olive oil

- 2 cloves of garlic

- 200g orzo

- 1 shredded carrot

- 1 shredded courgette

- 400ml veggie stock

- 1 tin of chopped tomatoes

- Spring onions

- 2 cups fresh spinach Spices

- Mixed herbs

- Dried basil

- Pepper

- Fresh Parsley

- 1 tsp lime zest and juice

 

Method

 

1. Add the olive oil and garlic to a pan. Sizzle for 2 minutes.

2. Then add the orzo, carrot, and courgette.

3. Heat through for 2 minutes.

4. Now add the veggie stock, chopped tomatoes and dried spices. Simmer until all liquid has been absorbed.

5. Now add the spring onions, fresh parsley, lime zest, and spinach.

6. Serve in a bowl and enjoy.
